Vegan brownies with overwhelming flavours of orange and chocolate.

Ingredients

Scale
  • 2 C all-purpose flour
  • 1 C brown sugar
  • 1 C cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 chocolate chips or chunks
  • zest of 1 orange, grated
  • 1/3 C vegan shortening, melted
  • 1 1/3 C water
  • 3 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 small overripe banana, mashed or blended (1/3 to 1/2 C)

Instructions

  1. Preheat the oven to 350˚F.
  2. Blend a small overripe banana and mix it with melted vegan shortening, water, apple cider vinegar and vanilla extract.
  3. In a separate larger bowl, mix all the dry ingredients except chocolate chips and orange zest.
  4. Pour liquid ingredients into the dry. Stir well.
  5. Then fold in chocolate chips and orange zest and mix to spread it evenly.
  6. Grease a baking dish and sprinkle it with some flour. Transfer brownie batter to it.
  7. Bake for 25-30 minutes.

Notes

If you bake brownies for 30 minutes, they will still be fudgy in the middle but more cake-y on the sides. So, test them after 20-25 minutes.
