Warm potato salad with fresh dill, pickles and vegan sour cream.

Ingredients

Scale
  • 1 pound potatoes (3 medium)
  • 1 medium pickle, diced
  • 1 tsp capers, diced
  • 1 small bunch of dill, chopped
  • 1 heaped tsp whole grain mustard
  • 1/2 C vegan sour cream
  • freshly ground black pepper

Instructions

  1. Peel and chop potatoes into 1 inch chunks.
  2. Boil or steam potatoes until tender. Let them cool down slightly.
  3. Mix well with the rest of ingredients.
  4. Your warm vegan potato salad is ready.
