Chilled Asparagus Soup with Avocado and Basil

Celebrate the beginning of summer with this chilled asparagus soup! Look at this mug full of green goodness, vitamins and healthy fats! Fresh, yummy and vegan AF!

The recipe makes one regular portion but you can divide it into two appetizer-size servings and pour it in fancy glasses.

Enjoy and stay healthy!

Bring a pot of salted water to boil. Prepare a bowl with ice water on a side.

Blanch asparagus for few seconds just to bring out the bright green color but don’t overcook it. Drain and put in a bowl with ice water. Then drain again.

Cut off few asparagus spears and save them for garnishing the soup. Blitz the rest of it with avocado flesh, garlic, basil, vegetable stock, salt and lemon juice in a blender on high speed until smooth.

Chill the soup in a fridge for few hours before serving.

Garnish with asparagus spears, basil leaves and splash of olive oil.

  • 350g asparagus (tough ends cut off)
  • 1 small avocado
  • 1 garlic clove
  • 1 C basil leaves
  • 1 C vegetable stock
  • juice of 1/2 small lemon
  • salt to taste
  • extra virgin olive oil (optional)
