When it’s so hot outside it’s such a pleasure to take out from the fridge the bowl of sexy, zesty, flavorsome and just so good-looking beetroot deliciousness! Chilled soups are definitely what I’m going to have this summer on a daily basis.
And I’m not kidding, my chilled beetroot soup feels really sexy. The color, the flavor, the character – everything is perfect! Next time I’m thinking of horseradish. Even more straight-forward. Sexy Zesty Chilled Beetroot Soup
Zesty and flavorsome chilled beetroot soup.

Ingredients
- 3 small beets, roasted and peeled
- 1 celery stalk, roughly chopped
- 1 garlic clove
- 1 thick slice of ginger
- 2 tbsp sesame seeds
- 1 C cold water
- juice of 1/2 lemon
- 1/2 tsp salt
- 1 tsp coconut sugar
- black pepper to taste
- diced radish for garnishing
Instructions
- Blitz all ingredients except radish in a blender on high until smooth.
- Put in a fridge for 3 hours to chill (or overnight).
- Garnish with diced radish and more sesame seeds.
