Sexy Zesty Chilled Beetroot Soup

If you find the flavors of raw garlic and ginger attractive then this chilled beetroot soup is exactly what you need. Or if you are Slavic and garlic with beetroot is what you live on.

When it’s so hot outside it’s such a pleasure to take out from the fridge the bowl of sexy, zesty, flavorsome and just so good-looking beetroot deliciousness! Chilled soups are definitely what I’m going to have this summer on a daily basis.

And I’m not kidding, my chilled beetroot soup feels really sexy. The color, the flavor, the character – everything is perfect! Next time I’m thinking of horseradish. Even more straight-forward. Or to make it thinner, add vegan Worcestershire sauce and shot of vodka to create Slavic Bloody Mary! Share your ideas below!

So if you have already roasted and cooled beetroot on hand then all you have to do is to blitz all ingredients except radish in a blender on high until smooth, and then put the soup in a fridge for couple hours to chill.

Garnish with diced radish, more sesame seeds and celery leaves if you have some.

Zesty and flavorsome chilled beetroot soup.

Ingredients

Scale
  • 3 small beets, roasted and peeled
  • 1 celery stalk, roughly chopped
  • 1 garlic clove
  • 1 thick slice of ginger
  • 2 tbsp sesame seeds
  • 1 C cold water
  • juice of 1/2 lemon
  • 1/2 tsp salt
  • 1 tsp coconut sugar
  • black pepper to taste
  • diced radish for garnishing

Instructions

  1. Blitz all ingredients except radish in a blender on high until smooth.
  2. Put in a fridge for 3 hours to chill (or overnight).
  3. Garnish with diced radish and more sesame seeds.
