Lemon, Garlic and Ginger Butter Beans

Refreshing yet piquant lemon, garlic and ginger butter beans.

Instructions

  1. Soak your beans for 6-8 hours or overnight.
  2. Drain and cover with fresh water. Cook until tender for about an hour.
  3. Grate lemon zest and set aside.
  4. Blend garlic, ginger and lemon juice in a food processor into a thin paste.
  5. Heat oil in a non-stick pan over medium heat. Temper cumin seeds until fragrant and add garlic-ginger paste. Stir for a minute.
  6. Add cooked and drained beans, season with salt and pepper and mix well. Then switch off the heat and stir in fresh cilantro and lemon zest.
  7. Serve hot as a side dish or cold as a salad.
