Young greens beans make a delicious and healthy side dish that everybody is familiar with. You can simply steam them, roast or sauté. Adding lots of onion, garlic and lemon juice to sweet sautéed green beans is my favorite way to cook them.
I like my green beans a bit crunchy so I don’t cook them for too long. This way I can preserve the natural flavor and save most of the vitamins.
First prepare green beans. Trim the ends and chop into approximately 1-inch pieces. If your green beans are not young enough you might want to blanch them before sautéing.
Note: for less sharp flavor add garlic BEFORE you add green beans.

Ingredients
- 450g (1lb) green beans
- 1 large onion
- 2-3 garlic cloves, pressed
- juice of 1/2 lemon
- salt and black pepper to taste
- olive oil for cooking
Instructions
- First prepare green beans. Trim the ends and chop into approximately 1-inch pieces. If your green beans are not young enough you might want to blanch them before sautéing.
- Heat oil in a large skillet over medium heat. Cut onion in half and thinly slice it. Sauté onion until it’s soft for about 7 minutes stirring frequently. Sprinkle with a bit of salt while cooking.
- Add green beans and cook for 10 minutes. Stir from time to time so it will cook through evenly.
- Then add garlic and sauté for another 2 minutes. Finally add lemon juice and season with salt and pepper. Mix everything and switch off the heat.
Notes
