By the end of the winter I’m going to share with you great recipe that will cheer you up with its bright color and refreshing flavor! And it is my mixed grain and beetroot salad with extra flavorful orange vinaigrette dressing.
I love the addition of wheat berries here cause they add amazing chewy texture, but if you’re sensitive to wheat or gluten, try to make this salad with a mix of wild and brown rice. I tried both and it tastes fantastic!
To speed up cooking process soak your grains overnight.
Next day drain the grains, cover with fresh water and cook for about 40 minutes. Drain again and let them cool down to room temperature.
Meanwhile make the dressing. Whisk all ingredients until combined and set aside.
Peel and dice the beets. Mix them well with cooked grains, onion, cranberries and orange vinaigrette.
Serve right away or put in a fridge for an hour to help all the flavors mingle together.

- 1/4 C pearl barley
- 2 small roasted beets
- 1 small red onion, thinly sliced
- 1 tbsp dried cranberries
For orange vinaigrette:
- juice of 1/2 orange
- zest of 1/2 orange
- 1 garlic clove, pressed
- 1/4 tsp dried tarragon
- 1 tsp white wine vinegar
- 1 tsp agave or maple syrup
- 2 tbsp extra virgin olive oil
- salt and black pepper to taste
