Qutab is a thin stuffed Azerbaijani flatbread that is usually made with greens, pumpkin, cheese or meat. I made mine completely vegan and filled it with lots of our first green spring vegetable – ramson.
Making vegan qutab the way I did, with almost exclusively ramson or wild garlic, is very brave. Obviously it tastes like atomic bomb lol. So I suggest to blend it with other greens or herbs that will mellow out its garlicky flavor. Believe me, even though simple green filling might seem poor, the qutabs come out super juicy and flavorsome! It is a great appetizer or addition to soups and stews.
Wash the greens beforehead and let them dry.
In a large mixing bowl combine flour, pinch of salt and aquafaba. Add water, starting with 2 tablespoons first. Knead the dough and add more water if it’s too dry. The dough should be very stiff.
Cover and let it rest for 30 minutes. The dough will become softer and more elastic after resting.
Meanwhile chop the greens. When you’re ready to form qutabs, mix it with olive oil, salt and pepper.
Heat a cast iron pan over medium to high heat.
Divide the dough into 4 equal pieces. Roll out each one into very thin circle, as thin as you can.
Spread quarter of the filling onto a half of the circle and fold it so it has shape of a half moon. Press the edges and transfer qutab into the skillet.
Cook qutabs for 1-1.5 minutes on each side. Remove from the pan and brush with olive oil.
Serve right away with vegan yogurt or on its own as a side dish.
