Growing up as a kid in the 90s, there was nothing more indulgent than eating dollops of condensed milk straight out of the can. Since then I tried to make my own homemade version using cow’s milk first, and then vegan condensed milk using soya milk. But I failed all the time.
Eventually I gave up, but with more vegan products popping out on the market and more recipes online I decided to try one more time. I was pleasantly surprised how well it turned out! The whole process of reducing rich and flavorful coconut milk is therapeutic and satisfying and, most importantly, this vegan condensed milk tastes AMAZING.
Also, coconut condensed milk takes less then 1 hour to make and requires only 2 simple ingredients and a saucepan!
In a small saucepan combine coconut milk and sugar. Slowly bring to a boil and reduce the heat to low.
Simmer, stirring frequently, until you reach the desired thickness. Keep an eye on it all the time to prevent separation and forming sugar crystals.
After 30 minutes it should thicken to the point, when you have runny vegan condensed milk, that can be used in all kinds of beverages, oatmeal etc. Keep reducing for another 15 minutes if you need a thicker consistency for other recipes such as vegan Muraveynik, that I’m going to share with you very soon.
Switch off the heat, pour into the jar, cover and place in the fridge.
Note: coconut condensed milk will thicken more once cooled.
