Recently I accidentally discovered the bomb flavor combination of tahini and curry powder. Just add these two ingredients to your steel cut oats and you have a fantastic, earthy, bold, spicy and hearty breakfast. Curried tahini oats.
This recipe is pretty basic. You can add your favorite vegetables to this, like cauliflower, sweet peas, any dark leafy greens and so on. I’m using my homemade curry spice blend here, which is pretty mild, so I like to top my oats with some chili flakes as well.
If you decide to cook oats in a plant-based milk, you’ll probably need a little more milk than water. Keep an eye and adjust as you go.
Bring 2 cups of water or plant-based milk to a boil. Add steel cut oats, lower the heat, cover and cook for 18 to 25 minutes. Give it a stir occasionally to prevent sticking to the bottom of a pan.
Now mix in tahini, curry powder and salt. Switch off the heat and let it rest covered for another 5-10 minutes.
Add toppings of your choice and serve.
