This simple Mediterranean chickpea salad is another outstanding way to use Za’atar spice blend. It is juicy, refreshing and flavorsome.
Also, it is a great lunch idea for the times when you’re in extreme hurry. You need only 5 minutes to whip it up. Serve it alongside the bread of your choice that you can dip into delicious leftover dressing.
Since I discovered how to make my own Za’atar spice blend, I put it in everything – salads, tofu marinade or just sprinkle over fresh veggies. The combination that I’m using in my Mediterranean inspired chickpea salad is an absolute bomb. It is indeed a lifesaver during this summer heat, when cooking something on a stove or in the oven sounds unbearable.
To make Za’atar dressing whisk together olive oil, lemon juice, salt and Za’atar spice.
In a salad bowl mix diced vegetables, chickpeas, chopped herbs and the dressing.
Serve and enjoy!

Ingredients
- 1 C cooked chickpeas
- 2 medium cucumbers, diced (about 1 C)
- 2 medium tomatoes, diced
- 1 small red or white onion, diced
- few sprigs of parsley, chopped
- small handful of mint leaves, chopped
For Za’atar dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp Za’atar spice
- 1/2 tbsp lemon juice
- salt to taste
Instructions
