Today I’m going to share with you another outstanding, originally vegan Georgian recipe. This time it’s Lobio Satsivi or green beans in walnut sauce.
I swear to God, this Lobio Satsivi is the most delicious thing I ate for the last year or so. The flavors are out of this world, I never ate so much of green beans in one go lol. If you like walnut flavor, this dish will find its place in your heart too.
Trim the tops of green beans and discard them. Chop the beans into 1-1.5 inch pieces. Steam for 15-20 minutes until green beans are tender but still have a bite to them. Prepare an ice bath on a side to stop the cooking process when it’s done.
Meanwhile blitz walnuts in a food processor into small crumbs. Set aside.
Heat oil in a large skillet over medium heat. Sauté onion until soft and caramelized. You may want to add a little bit of water to prevent it from burning.
Add ground walnuts into the skillet and stir to toasted the nuts slightly. Then throw in steamed green beans, garlic, chopped herbs, spices, salt and vinegar. Mix well. If the mixture seems too dry, add a splash of water.
Taste for seasoning and adjust if needed.
Lobio Satsivi can be served both warm and cold. Enjoy!

I buy these herbs online but sometimes you can find them at the markets. You can find some Georgian spice blends in almost any supermarket.
