Lobio Satsivi – Georgian green beans with walnuts and fresh herbs.

Ingredients

Scale
  • 400g green beans
  • 1 smal onion, diced
  • 1 garlic clove, minced
  • 100g walnuts
  • small bunch of green basil, chopped
  • small bunch of purple basil, chopped
  • small bunch of cilantro, chopped
  • 1/4 tsp ground blue fenugreek
  • 1/8 tsp cayenne pepper (or to taste)
  • 1 tsp white wine vinegar
  • salt to taste
  • oil for cooking

Instructions

  1. Trim the tops of green beans and discard them. Chop the beans into 1-1.5 inch pieces. Steam for 15-20 minutes until green beans are tender but still have a bite to them. Prepare an ice bath on a side to stop the cooking process when it’s done.
  2. Meanwhile blitz walnuts in a food processor into small crumbs. Set aside.
  3. Heat oil in a large skillet over medium heat. Sauté onion until soft and caramelized. You may want to add a little bit of water to prevent it from burning.
  4. Add ground walnuts into the skillet and stir to toasted the nuts slightly. Then throw in steamed green beans, garlic, chopped herbs, spices, salt and vinegar. Mix well. If the mixture seems too dry, add a splash of water.
  5. Taste for seasoning and adjust if needed.
  6. Lobio Satsivi can be served both warm and cold. Enjoy!
