This apple and kohlrabi salad is so juicy and refreshing! And vegan yogurt dressing makes it a healthy and low calorie alternative to a coleslaw.
Raw kohlrabi has very delicate, almost unnoticeable flavor and it is VERY juicy. This salad should satisfy those picky eaters who don’t really appreciate vegetables. Plus it has lots of health benefits!
First of all make the dressing. Whisk together vegan yogurt, extra virgin olive oil, sumac, salt and black pepper. Set aside.
Peel kohlrabi and slice it as thin as you can. I suggest to use mandoline for this. Then stack the slices and cut them into strips.
Peel (optionally) and core the apples. Slice them as thin as kohlrabi and cut into strips. Sprinkle apples with lemon juice while you cutting them to prevent from browning.
Mix kohlrabi and apples with chopped dill and yogurt dressing. Serve right away.
