Like most of us, usually I don’t have much time to spend in the kitchen and, sometimes, I don’t even have the desire to cook. This is when this simply 10-minute pasta recipe comes in handy.
I made this pasta with my homemade ajvar that is nice and smooth, but chunky store-bought ajvar is great as well. White beans are an excellent choice of protein here, but I also tried to make it with tofu and it worked just fine. So, basically, whatever beans you have on hand you can use. If you have any greens, definitely throw them in there too!
Cook your favorite type of pasta in salted water according to the package.
When pasta is almost done heat a little bit of oil in a skillet over medium heat. Add garlic and stir for a minute until fragrant. Then add white beans and ajvar. Cook for a minute.
Drain the pasta and add it to the skillet. Season with black pepper and salt (if needed). Mix well so the pasta is coated in the sauce evenly.
Switch off the heat and serve.
