Are you in a Christmas mood yet? Here’s an easy, customizable, and delicious vegan mincemeat recipe.
For the dried fruit mix, I used sultanas, raisins, dried cranberries, dried apricots, and prunes. I couldn’t find any currants where I live, but if you can, go ahead and throw them there. Slivered almonds give the mincemeat a nice texture, but if you can’t have nuts, you can omit them.
I used spiced rum in this recipe, and it suited perfectly. You can use brandy or even sherry or port (although I would increase the amount of sherry to 2 tbsp).
Where to use vegan mincemeat?
You can put vegan mincemeat in mince pies, strudels, buns, and other baked goods. It is super cozy and delicious.
Preheat oven to 90°C (200°F).
Peel, core, and dice the apple into tiny cubes. In a baking dish, mix the diced apple with dried fruit, slivered almonds, zest, orange and lemon juice, coconut sugar, and spices.
Cover the dish with aluminum foil and put it in the oven for 1 1/2 hours.
Remove the vegan mincemeat from the oven and let it cool down. Then add a tablespoon of rum or brandy and mix well.
Transfer the mincemeat into jars and keep them in the fridge for up to 4 weeks.
